My First Attempt at Meal Prepping

I’ve decided that it’s finally time I do some serious meal prepping.

I’ve been doing a little bit of meal prepping by prepping my lunches for the week ahead by buying a bunch of veggies (carrots, cucumbers, bell peppers) and chopping them on Sunday ahead of time.  I also usually make some spicy mayo dip to go with it like you get a sushi place. The rest of my lunch usually ends up being yogurt and some fruits like bananas and apples (as well as the occasional smoothie).

HQ has been working crazy hours this past week (including working Monday last minute) and we really didn’t get much of a chance to go grocery shopping . We had to live off what he could pick up in a quick after work shopping trip. One of the downsides about where we live is that the closest grocery store is a farmer’s market-type place and it’s only open til 6.

I ate a lot of frozen pasta veggie microwave meals because I was always super tired after work. So I made a point to go grocery shopping yesterday to get some stuff that we would need. We bought:

  • 1.5 lb of chicken breast
  • 1lb of chicken thighs
  • 1lb of bacon
  • 3 red bell peppers
  • 3 onions
  • 6 apples
  • bunch of bananas

I already had these on hand:

  • pasta
  • heavy cream
  • Riesling
  • 4 cucumbers
  • baby carrots
  • spicy mayo sauce
  • yogurt

So I was able to plan out a few meals for the week. HQ made me Coq au Riesling (without mushrooms, since I don’t like them) Saturday night and I plan on eating the leftovers from this throughout the week.

On Saturday I also prepped all the stuff I would need for Oven Baked Fajitas (probably two dishes worth) and froze them. I don’t have any tomato or tortillas at the moment, so I’ll either have HQ pick them up or eat them over rice. I also prepped my cucumbers for the week. I have a container of spicy mayo at work, so I didn’t need to make any more, but here’s how I make it:

  • 1/2 cup Kewpie Mayo (from a local Chinese grocery store, its not as pungent to me as normal mayo is)
  • 1-2 TBSP Sriracha
  • Splash of Sesame Oil
  • Splash of Lemon juice

We’ll probably end up picking up a few more things throughout the week, but hopefully this will make it a little easier on me.
